Chef Pietro Fortunati, born in 1989, is a Tuscan DOC.
Passionate about cooking since childhood, he grew up by carefully observing his grandparents in the kitchen preparing the traditional recipes of Tuscan cuisine. Graduated from the Le Cordon Bleu School of Haute Cuisine, he began his career at The Four Season in Florence, at the Michelin starred restaurant Il Palagio, where he worked for a few years. He arrived at Borgo Scopeto Relais in 2013, alternating the summer season with the winter season between the Hotel de Russie in Rome under the guidance of Fulvio Pierangelini of the Le Jardin de Russie restaurant and the Dei Lorena restaurant at the Hotel Bagni di Pisa.
Today Pietro leads the kitchens of Borgo Scopeto full-time, showing in each of his creations the love for the raw material and the continuous search for flavors that are able to give the right push and lightness to the traditional Tuscan dishes, that marked so strongly his childhood.
